Baked Taco Pasta


Sunday night is my favorite night of the week to make dinner at home. I have plenty of time to prep and lots of fresh grocery's. On Sunday's, I try to make a meal that I can eat left overs from. I'm a big fan of eating left overs. I hate wasting food. It's always nice when I can get a couple meals from a dinner. 

This particular recipe was really yummy and inexpensive to make. I was in the mood for Mexican and Italian food. Baked Taco Pasta seemed to be a great combination of the two. I decided to come up with my own recipe. I just thought of all the ingredients I like in my taco and added them to macaroni noddles.


Ingredients:
  • 1 lb lean turkey meat (ground beef is fine too, turkey is just leaner)
  • 1 16oz can of diced tomatoes
  •  1/2 can of jalapenos
  • 1 cup onion
  • 1 package taco seasoning
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup grape tomatoes
  • 1 box macaroni noddles
  • Tbs fresh cilantro

Direction
  • Preheat oven to 350 degrees
  • Cook noddles as directed on box
  • Cook meat with chopped onion until fully cooked. 
  • Add tomatoes, jalapenos and taco seasoning.
  • In a large mixing bowl add meat mixture with noddles and 1 cup cheese.
  • Pour into a greased large Pyrex baking dish
  • Top with chopped grape tomatoes and cilantro
  • Bake in oven for 30 minutes.
  • Let cool and enjoy :)

I really enjoyed this dish. We got a few meals out of it. I will definitely be making this one again.

What's in your Closet?




Last weekend I said the phrase that all women say from time to time, "I have nothing to wear". At that moment I had a strong urge to go shopping. Instead of a shopping trip, I decided to give my closet a second chance. I thought that I would set a challenge for myself. In order to appreciate the clothes that I already own, I decided that this past week, I would put together a new outfit, with old clothes, everyday and wear it to work. That's just what I did. 

Monday
 I've had this black dress hanging in my closet for a long time, but this was the first day I actually wore it. 

Tuesday
 This look is straight from my Pinterest style board. I pinned it a long time ago, but this week was the first time I wore this all together. 

Wednesday
It's winter, it's cold, so layering is your best bet in this kind of weather. I love sweaters, scarves and boots right now.

Thursday
I never wear button downs, but I might start, because I really liked this look together. I bought this shirt a long time ago for my internship in college, this is the first time I've worn it since then.

Friday
On Friday, I just wanted to be comfortable. I wore this loose fitting black dress with leggings. 

At the end of the week, I found out that I had a lot more in my closet than I thought I did. This week was extremely long for me. I have to say that wearing a cute outfit everyday really helped me get through my week. It gave me confidence, even when things weren't going my way. Whenever you find yourself saying " I have nothing to wear", take a closer look into your closet and see what kinds of looks you can put together.

Married to a Pilot



Being married to a pilot is a different lifestyle than most marriages.  I didn't know anything at all about aviation or the pilot industry before I met my husband.  All I knew was that pilots had free airline travel, which I thought sounded pretty great.  What I have learned is that there is so much more to the career than anyone else would understand.

Whenever my husband and I are out together, meeting new people, they always ask us what we do for a living.  I'll say "I am a director at a preschool" and their response is "oh that's nice".  When my husband responds with, "I'm an airline pilot",  their face lights up, as if they have just met a celebrity or something.  They immediately respond with a line of questions like "oh wow, who do you fly for?  How long have you been flying?  Where did you learn how to do that?  Where do you fly to?  Do you fly internationally?  Are you the pilot or the co-pilot? Are you gone a lot?  Do you have one route you fly every time?  Have you ever flown one of the big planes?" People always seem to be so intrigued with his job, which they should be, it's a pretty awesome job that not everyone can do, but the truth is it's not as glamorous of a job as everyone thinks it is.  It comes with a lot of set backs and low pay, before you can finally land that dream job, which for most pilots would be a legacy airline, like American or Delta. 

I'm pretty lucky compared to most pilot wives, because I see my husband everyday.  He has enough seniority at his company, that he can work a schedule that allows him to be home everyday.  He prefers to work at night.  He leaves in the evening, fly's somewhere, spends the night, fly's back and is home by 9am.  A lot of pilots commute to their bases and work long trips where they're on the road for 4 days at a time.  I do know that this schedule won't last forever.  When upgrades or new jobs come his way in the future, I might be one of those pilot wives missing their husbands all the time.

We are not the typical pilot couple.  Not only do I get to see my husband all the time, but we live in our home state.  Actually, we only live a few miles away from where we both grew up.  We didn't plan on that, but somehow we are still here.  That almost changed a year ago.  My husband has been with his current company for almost 6 years.  He has been apply for other jobs ever since he started.  It's been such a roller coaster ride at his current company.  He was always looking for a way to make more money and advance with his career.  For a regional first officer you have 2 options. 1.) Accept the low pay and wait your turn or 2.) Get a job over seas.

Last year, we were exploring option # 2, and it almost happen.  My husband went to Dubai for a job interview last April, it came really close for us.  The job offered great pay and benefits, but it didn't end up happening.  He got cut in the final stages of the interview.  We were disappointed, but at the same time I was relieved.  I wanted him to get the job, but I also wanted what was right for us.  At the time I thought that job was the answer.  Now, I feel that it didn't happen for a reason.

 A few months later, he interviewed for another job in Dubai.  This time it was a corporate pilot job, which is very different than airline flying.  He turned it down.  Even though it offered great pay, the schedule wasn't great and the job was too unstable for us to make that huge move.  After we made that decision, he had another corporate job interview.  This time it was in Macau, China.  Initially, he didn't get the job, but months later we woke up to an e-mail asking him when he could start.  It caught us off guard.  We had already accepted that we would be staying in the United States, but it was a great job opportunity, we didn't want to shoot it down too fast.  In the end he turned down the job.  It came down to what we wanted for our future.  What would make us happy?  Would we be happy not having to worrying about money and living in China or living frugally in America?  We did a lot of thinking, but in the end we decided we are happy here and we can wait for the airline industry to get better.

I know that we never ended up moving, but that doesn't mean that it wasn't hard to make these decisions.  I learned a lot about Dubai and Macau.  It has definitely opened my mind to new things.  A couple years ago, I would of never said I would move to the Middle East.  But now, I can honestly say that I would with the right job.

Even though it's not always easy to be married to a pilot, I wouldn't change it!  I feel that we have a stronger marriage because of it.  Even though we have had to struggle with money in order for us to both pursue our careers, it has been worth it.  There is so much more to life than money.

I love my pilot and I'm so happy that I get to spend my life with him.

Pineapple Avocado Salsa Salmon


Lately, I've been in the mood for salmon. I love salmon! There are so many different ways that you can make a salmon dish. Ever since we got rid of cable, I've been watching a lot of cooking shows on the local stations. I am obsessed with the Live Well Network. There is this one cooking show I really like, called Mexico: One Plate At A Time. Rick Bayless is the host of the show. He is always making the most delicious looking Mexican dishes. I've been watching him make all kinds of salsas. I love unique salsas, with different flavors. I wanted to some how combined my salmon and salsa craving, so that's when I headed to pinterest for some inspiration. That's where I got the idea to make Salmon with a Pineapple Avocado Salsa.  


I started off by making my salsa. 

Salsa Ingredients: 
1 avocado
1 cup of grape tomatos
1 small red onion
1/2 cup of chopped pineapples
2 Tbs of cilantro
1 Tbs lemon juice
Salt and pepper

Just dice it all up and mix it together in a bowl.

I preheated my oven to 400 degrees and placed the salmon on a baking sheet. Then, I dripped a little bit of olive oil over the top and seasoned with Morton's Seasoning. (If you don't have Morton's Seasoning, you can just use some salt and pepper.) Lastly, I placed the fish in the oven and cooked it for 20 minutes.

  
After the salmon was cooked, I placed the salmon on a bed of brown rice and topped it with the salsa. It was delicious! This would be a great summer meal. It's super light, but still filling! 

Oh yeah, I almost forgot to mention how I saved money on this meal. 

To start, the vegetables I used were all on sale. When I buy produce, I always try to get smaller portions, because it's usually priced by the pound. I'm only cooking for 2 people, so there is no need to buy too much. Another thing I did with this recipe to save, was using canned pineapple, instead of fresh. I would of preferred fresh pineapple, but they weren't on sale and I couldn't bring myself to spend $5 on fruit. Lastly, I used frozen salmon, because it was on sale, and it was a bigger portion, so I did get 2 meals out of it. It's little things like this that will help keep your grocery bill down when planning to make a meal.

My Closet~ What I Wore Wednesday

I know I'm a day late on posting my outfit, but I've been super busy this past week. I haven't posted an outfit on Wednesday in a couple weeks, because it was New Years Day last week and Christmas the week before, but I do want to continue to post one every week. It challenges me to find new outfits in my closet every week. It's not always easy to find old clothes and make them into a new outfits, but that's my goal in order to stay thrifty.
So here is my outfit from this week.

Black dress- This is a Forever 21 dress from my college days that I have kept through out the years.
Black leggings- I have about 3 or 4 pairs of black leggings. They are a must have during the winter.
Brown Boots- I wear these all the time, they are my favorite pair of boots!
Plum Sweater- This is a Target clearance find. I bought it to wear over my dress at my rehearsal dinner. I wear it all the time now, because it goes with a lot of my clothes.
Infinity scarf- We had a $15 limit on our Christmas present exchange this year at work. This scarf was the gift I got, which is perfect for me. I love scarves!

Getting Back into Cooking

Ever since I got married, one thing that I really enjoy doing is cooking. I love putting a meal together for my husband and I. Before him, I was not much of a cook. Mac and Cheese was about the most I ever cooked. Now that I have someone to cook for I love it! Lately, I have been slacking on cooking. I have been working such long hours. I've been going through drive thrus and ordering pizza's on my way home from work. My body can't take it anymore! One of my New Year resolutions is to start making time for things, and cooking is one of those things I would like to make time for. 

I've been on the hunt for some new recipes to try in 2014. Pinterest is where I get most of my recipes. I post anything that looks good and looks doable. (your not going to see me baking cutesy cakes made to look like a candy bar or making gourmet complicated recipes) I honestly don't know what I did before there was Pinterest. I don't always have a great attention span for following recipes. Plus I always forget at least one ingredient at the grocery store. This is when I improvise. It always turns out yummy. 

I pinned a great spaghetti squash recipe recently. I love pasta dishes! Not only do I love pasta, but pasta is cheap, so I make a ton of pasta dishes. I know that pasta has a lot of calories in it. It can really add up when your trying to watch your calorie intake. This is why I love spaghetti squash. It's a great substitute for pasta. It has a very mild taste to it.

So the recipe I tried was a Spaghetti Squash Ricotta Cheese Casserole. The original recipe is from this great blog Fitness & Feta. I found some really great healthy recipes on this blog that I can't wait to try! I made my casserole a little different then hers, due to lack of planning, but it still turned out really yummy!



 I got all my ingredients from Kroger. When I first started grocery shopping in the area I live now, I tried out all the grocery store to find out where I could get  the best deals. For me it was Kroger. They offer the best weekly deals. I use my Kroger app to know what's on sale and plan my meals around that. I like their Kroger bran items as well. I can usually find just about everything I need there.

So here is what I used...

Ingredients:
Large Spaghetti Squash- $.99 per lb.
1/2 cup Ricotta cheese- $2
1/4 cup shredded cheese (the recipe said any kind of cheese you want, I used Italian blend cheese)-$2
1 egg (I used 1/4 cup of egg beaters. They are less fat and were on sale.)- $1.25
1 tsp mince garlic
1 Tomato (The original recipe calls for sun dried tomatoes, but I didn't realize that until after I got home from the store. The regular tomato was good too, but I'm sure the sun dried tomatoes would taste great too.)
2 Tbs of marinara sauce.

Directions:
  1. Preheat the oven to 400.
  2.  Cut Squash in half, scoop seeds out and place on cookie sheet.  
  3. Drip olive oil and salt and pepper over squash
  4.  Bake for 45 minutes- 1hour
  5.  After squash is cooked, let cool
  6.  Use fork to remove the insides and make it into a spaghetti form.
  7.   Preheat oven to 350.
  8.  Add Spaghetti squash, ricotta cheese, egg beaters, Italian cheese and tomato in bowl and mix.
  9.  Spray 8x8 baking dish with oil of your choice.
  10.  Place all ingredient to baking dish, then cover and bake for 20 minutes, uncover and finish cooking for another 20 minute. 
  11. Let cool
  12. Add warm Marinara to plate, top with casserole and Parmesan cheese and enjoy!
This recipe super easy, cheap to make, healthy and delicious! It definitely makes me want to get back into cooking!

New Years



I always like New Years, because it's a time to start fresh. Last year was good, but this year will be even better! I will turn 30 in 2014. I'm very excited for that chapter of my life. There are so many things to be excited for in my 30's. For one, I hope to start a family in my 30's. We have been waiting until our 30's to start a family, because we want to be financially ready for one.  I'm also excited for my 30's, because I have more work experience now then I had in my 20's, which will only lead me into having more career opportunities in the future. So this year, my New Years resolutions are all ways that I can improve my over all life and become a better person.

Here is my list of resolutions: 

1.) Be less selfish- I think we can all be selfish sometimes. Most of us have spent our lives worrying about ourselves. I've heard people say that your 20's are the years that you can be selfish. You can figure out your path in life. I've learned to be less selfish when it comes to being married. I share everything with my husband. It's not my money or his money, it's our money. We want to start a family in the near future, so I know that there will be scarifies when that happens, so I might as well start now. 
2.) Better at time management- I work a lot of hours, especially now with my new position. The long work week doesn't bother me too much. I like my job and if I wasn't working I'd be board out of my mind. The only thing is, I feel so tired when I get home at the end of the day, that I usually eat dinner, watch TV and then go to bed. I would like to set aside some time during the week to workout, clean my house more, give myself a pedicure, make dinner for my husband, get coffee with a friend or work on my blog more. All these thing could be done if I make the time to do them.
3.) Over all,  I want to be a better person- I think that should be the most important New Year resolution of all. Everyone should strive to be the best they can. I want to be a better wife, daughter, director, Christian and friend.

 Those are my resolutions for 2014. I think I can keep these resolutions. I can't wait to see what new things this year will bring!
